Breakfast Burritos

Ingredients

1/4 lb. hot or mild bulk Italian sausage
1/4 C onion, chopped
1 hot pepper, seeded and chopped
1/4 C bell pepper, chopped
6 eggs, beaten

1/4 C milk
salt and pepper to taste
1/2 C grated Mexican style cheese
flour tortillas
green salsa

Directions

In a large skillet, cook sausage until browned. Add onion and peppers and continue to cook until until vegetables are tender. Remove from skillet with slotted spoon and set aside.

In a medium mixing bowl, combine eggs and milk. Add salt and pepper to taste. Add mixture to pan drippings and cook over medium heat until eggs are solid, stirring frequently.

Return sausage mixture to skillet and stir to combine with eggs. Sprinkle cheese on top and stir in until cheese melts.

Serve in warmed flour tortillas. Top with green salsa. Roll and eat. Makes 3 -4 burritos.
