Chicken & Dumplings

Ingredients

1 whole chicken
Water
Salt
Pepper
Curry powder (if desired)
Poultry seasoning (if desired)
Bisquick or other baking mix
Milk

 

Directions

Wash chicken.  Place in large pot or Dutch oven.  Add salt, pepper, other seasonings.  Cover with water.

Bring to a boil, reduce heat, and simmer for 1 hour.  Check often during cooking; add water if needed to make sure pot does not boil dry.  Chicken will fall apart easily when done.

Remove from heat and allow to cool until chicken can be handled.  Remove chicken from broth, set broth aside.  Pick out skin and bones and discard.  Return chicken pieces to broth.

Heat broth to boiling.  Prepare dumplings according to box directions.  Drop dumplings into boiling broth, cover tightly, and steam until done.  Makes great leftovers!
