Scallops Thermidor

Ingredients

1 lb. cooked scallops (steamed)
4 oz. fresh mushrooms, sliced
1/4 C butter
1/4 C flour

1/2 tsp. powdered mustard
1/8 tsp. cayenne pepper
2 C milk
2 T chopped parsley
Grated Parmesan cheese
Paprika

Directions

Cut large scallops in half. Melt butter in a large frying pan; fry mushrooms in butter for 5 minutes. Blend in flour and seasonings. Add milk gradually and cook until thick, stirring constantly. Add scallops and parsley. Place in a glass baking dish or pie pan, or separate casserole dishes. Sprinkle with cheese and paprika. Bake in a hot oven, 400 degrees, for 10 to 15 minutes or until cheese browns.

Serves 6.
