Spaghetti Pie

Ingredients

2 T butter, divided
1 8 oz. package spaghetti, cooked and drained
1/3 C Parmesan cheese
2 eggs, beaten
1 pound sausage, cooked and drained
½ C chopped onion
¼ C chopped green pepper

1 16 oz. can tomatoes, drained
(Reserve 1 T of juice.)
1 6 oz. can tomato paste
¼ tsp. sugar
1 tsp. oregano
¼ tsp. basil
1/8 tsp. ground allspice
½ tsp. garlic salt
1 C cottage cheese
¾ C grated mozzarella cheese

Directions

Grease a 10” pie plate with 1 tsp. of butter.  Combine hot spaghetti with remaining butter, Parmesan cheese, and eggs.  Make a nest of the spaghetti mixture in the pie plate; set aside. 

Combine sausage, onion, green peppers, tomatoes, reserved tomato juice, tomato paste, sugar, and spices.  Cook over low heat for 10 minutes, stirring frequently. 

Spread cottage cheese over spaghetti; top with sauce.  Bake 15-20 minutes at 350°. 

Remove from oven; top with mozzarella cheese and bake an additional 5-10 minutes.  Allow to cool 5-8 minutes before slicing.  Serves 6.
