Spicy Fish Fillets

Ingredients

1/3 C all-purpose flour
2 T cornmeal
1 T chili powder
1 tsp. cayenne pepper
1/2 tsp. garlic powder
1/2 tsp. paprika

1 1/2 tsp. salt
1/8 tsp. pepper
1 1/2 lb. tilapia fillets
2 T butter
2 T cooking oil

Directions

In a shallow dish combine flour, cormeal, chili powder, cayenne, garlic powder, paprika, salt, and pepper. Dip fish into flour mixture to coat.

In a large skillet heat half the butter and half the oil. Add half the fish to the skillet in a single layer. Fry over medium heat till fish is done and and caoting is golden brown, turning once (about 3 minutes each side). Remove fish from skillet and drin on paper towels. Repeat with remaining butter, oil, and fish. Makes 6 servings.
