Apricot Banana Nut Bread

Ingredients

2 C sifted all-purpose flour
1 C sugar
1 tsp. baking powder
½ tsp. baking soda
½ tsp. salt

½ C chopped dried apricots
½ C chopped walnuts or pecans
2 mashed ripe bananas
½ C milk
1 egg
¼ C melted butter or margarine

Directions

Sift together dry ingredients; add apricots and nuts.

Combine remaining ingredients and add to dry ingredients, stirring until just well-blended.

Turn into a greased and waxed paper-lined 9” X 5” loaf pan.  Bake at 350° for one hour or until done (browned on top and bounces back when touched).

Cool in pan for 10 minutes.  Turn out onto wire rack.

Makes 1 loaf of bread.
