Lasagne

Ingredients

2 T olive oil
½ C minced onion
1 lb. ground chuck (or buffalo)
2 cloves garlic
1½ tsp. salt
¼ tsp. pepper
¼ tsp. oregano

3 T parsley
1 16 oz. can tomatoes
1 8 oz. can tomato sauce
½ C grated Parmesan cheese
6 uncooked lasagna noodles
12 oz. thinly sliced mozzarella
16 oz. package ricotta

Directions

In hot oil in skillet, sauté onions.  Add meat, cook until red color disappears.  Slice garlic, mash with salt.  Add to meat with pepper, oregano, parsley, tomatoes, tomato sauce, and 2 T Parmesan.  Simmer covered 30 minutes.

About 45 minutes before serving, start heating oven to 350°.  Cook lasagna noodles as label directs.  Drain, cover with cold water.

In 12” X 8” X 2” baking dish, arrange 1/3 of meat sauce, then single layer of drained lasagna, placed lengthwise (leave rest in water), layer of mozzarella, layer of ricotta, 2 T Parmesan.  Repeat, ending with remaining meat sauce and Parmesan.  Bake 30 minutes.
